Christmas Day

On Christmas Day, we hosted Christmas for my husband's side of the family...for those family members that live in Cyprus.  We enjoyed a casual dinner, played a few games, etc.

Since it was a casual dinner, I prepared make-your-own deli sandwiches with lots of options, homemade seven-layer Mexican dip with tortilla chips, homemade veggie dip with vegetables, and homemade Christmas cheese spread with French bread.  For dessert, I prepared several homemade goodies, including peppermint bark, Christmas chocolate bark, snow balls (homemade cake bites dipped in chocolate and sprinkled with coconut), chocolate covered pretzels, sugar cookies, etc.

Christmas Eve

Hope you all had a wonderful Christmas!

I had a delightful Christmas holiday.  My husband had to work on Christmas Eve, but he was home in time for dinner!  So, I prepared a a nice Christmas meal for us; the homemade meal included mashed potatoes, sweet corn, vegetarian stuffing, garden salad, and French bread with a cheese/onion spread.

After dinner, we went to a Christmas Eve Candlelight Service at the Greek Evangelical Church...same as last year.  Our church, International Church Fellowship, hasn't hosted a Christmas Eve service in a few years, and we enjoy going to church, especially on Christmas Eve.  :)  We have attended the Greek Evangelical Church before, as well as a few of various events throughout the year (and my ladies Bible study is connected through this church).  Anyway, the candlelight service was wonderful!

Afterward, we drove home for our mini-Christmas party...just my husband and I.  :)  We finished reading The Christmas Story, enjoyed some Christmas sweets/snacks, opened presents, took lots of photos, and watched a Christmas movie.  Such a delightful holiday together!

Since my side of the family lives in another country, we were unable to spend Christmas with them.  However, we hosted Christmas for my husband's side of the family (for those family members that live in Cyprus) on Christmas Day.  I'll post those photos soon!  :)

Limassol Christmas Decorations

While driving home, we stopped to take a few photos of Christmas decorations in the Limassol and the surrounding area.

Bible: One Hundred Percent

I completed my goal!

One of my goals for 2010 included re-reading the entire Bible in chronological order, and I even managed to complete the reading a few days early.  This was highly beneficial for me, and it was very encouraging to read the Bible in chronological order.

Now, the accountability marker on Blue Letter Bible shows one hundred percent, along with the following message:
"Congratulations!  You have successfully completed the entire Bible using the Chronological Plan!  We hope you have enjoyed your reading experience and have been blessed by the teaching therein.  God bless you as you continue to serve Him!"

And I highly recommend taking the time to read (or re-read) the entire Bible within a year or two.  With 2011 starting in only a few days, this is the perfect time to set a goal.

More food photos!  Homemade desserts, including two types of chocolate bark, peppermint bark, snow balls, etc.  The snow ball dessert is quite time consuming...in summary, bake a cake, smash it up, mix it with homemade frosting, roll into balls, refrigerate, dip in melted chocolate, and top with coconut.

The Christmas Story

This year (in December), my husband and I are reading a part of the Christmas story each day.  Then, we plan to read the whole story of Jesus Christ's birth on either Christmas Eve or Christmas Day.  Even though it's almost Christmas, here are the scripture verses for you to read, too.  Merry Christmas!

December 1 -- “In the beginning was the Word, and the Word was with God, and the Word was God.  He was with God in the beginning.  Through him all things were made; without him nothing was made that has been made.  In him was life, and that life was the light of all mankind.  The light shines in the darkness, and the darkness has not overcome it.”  John 1:1-5
 
December 2 -- “There was a man sent from God whose name was John.  He came as a witness to testify concerning that light, so that through him all might believe.  He himself was not the light; he came only as a witness to the light.  The true light that gives light to everyone was coming into the world.  He was in the world, and though the world was made through him, the world did not recognize him.”  John 1:6-10
 
December 3 -- “He came to that which was his own, but his own did not receive him.  Yet to all who did receive him, to those who believed in his name, he gave the right to become children of God—children born not of natural descent, nor of human decision or a husband’s will, but born of God.  The Word became flesh and made his dwelling among us.  We have seen his glory, the glory of the one and only Son, who came from the Father, full of grace and truth.  John 1:11-14

December 4 -- “Out of his fullness we have all received grace in place of grace already given.  For the law was given through Moses; grace and truth came through Jesus Christ.  No one has ever seen God, but the one and only Son, who is himself God and is in closest relationship with the Father, has made him known.”  John 1:16-18

December 5 -- “In the sixth month of Elizabeth’s pregnancy, God sent the angel Gabriel to Nazareth, a town in Galilee, to a virgin pledged to be married to a man named Joseph, a descendant of David.  The virgin’s name was Mary.”  Luke 1:26-27

December 6 – “‘The angel went to her and said, “Greetings, you who are highly favored!  The Lord is with you.’  Mary was greatly troubled at his words and wondered what kind of greeting this might be.  But the angel said to her, ‘Do not be afraid, Mary; you have found favor with God.  You will conceive and give birth to a son, and you are to call him Jesus.  He will be great and will be called the Son of the Most High.  The Lord God will give him the throne of his father David, and he will reign over Jacob’s descendants forever; his kingdom will never end.’”  Luke 1:28-33

December 7 – “‘How will this be,’ Mary asked the angel, ‘since I am a virgin?’  The angel answered, ‘The Holy Spirit will come on you, and the power of the Most High will overshadow you. So the holy one to be born will be called the Son of God.  Even Elizabeth your relative is going to have a child in her old age, and she who was said to be unable to conceive is in her sixth month.  For no word from God will ever fail.’  ‘I am the Lord’s servant,’ Mary answered.  ‘May your word to me be fulfilled.’  Then the angel left her.”  Luke 1:34-38

December 8 – “This is how the birth of Jesus the Messiah came about: His mother Mary was pledged to be married to Joseph, but before they came together, she was found to be pregnant through the Holy Spirit.”  Matthew 1:18

December 9Because Joseph her husband was faithful to the law, and yet did not want to expose her to public disgrace, he had in mind to divorce her quietly.  But after he had considered this, an angel of the Lord appeared to him in a dream and said, ‘Joseph son of David, do not be afraid to take Mary home as your wife, because what is conceived in her is from the Holy Spirit.  She will give birth to a son, and you are to give him the name Jesus, because he will save his people from their sins.’”  Matthew 1:19-21

December 10 – “All this took place to fulfill what the Lord had said through the prophet: ‘The virgin will conceive and give birth to a son, and they will call him Immanuel’ (which means ‘God with us’).”  Matthew 1:22-23

December 11 – “When Joseph woke up, he did what the angel of the Lord had commanded him and took Mary home as his wife.  But he did not consummate their marriage until she gave birth to a son.  And he gave him the name Jesus.”  Matthew 1:24-25

December 12In those days Caesar Augustus issued a decree that a census should be taken of the entire Roman world.  (This was the first census that took place while Quirinius was governor of Syria.)  And everyone went to their own town to register.  So Joseph also went up from the town of Nazareth in Galilee to Judea, to Bethlehem the town of David, because he belonged to the house and line of David.  He went there to register with Mary, who was pledged to be married to him and was expecting a child.”  Luke 2:1-5

December 13 – “While they were there, the time came for the baby to be born, and she gave birth to her firstborn, a son. She wrapped him in cloths and placed him in a manger, because there was no guest room available for them.”  Luke 2:6-7

December 14 – “And there were shepherds living out in the fields nearby, keeping watch over their flocks at night.  An angel of the Lord appeared to them, and the glory of the Lord shone around them, and they were terrified.”  Luke 2:8-9

December 15 – “But the angel said to them, ‘Do not be afraid. I bring you good news that will cause great joy for all the people.  Today in the town of David a Savior has been born to you; he is the Messiah, the Lord.  This will be a sign to you: You will find a baby wrapped in cloths and lying in a manger.’”  Luke 2:10-12

December 16 – “Suddenly a great company of the heavenly host appeared with the angel, praising God and saying, ‘Glory to God in the highest heaven, and on earth peace to those on whom his favor rests.’”  Luke 2:13-14

December 17 – “When the angels had left them and gone into heaven, the shepherds said to one another, ‘Let’s go to Bethlehem and see this thing that has happened, which the Lord has told us about.’  So they hurried off and found Mary and Joseph, and the baby, who was lying in the manger.”  Luke 2:15-16

December 18 – “When they had seen him, they spread the word concerning what had been told them about this child, and all who heard it were amazed at what the shepherds said to them.  But Mary treasured up all these things and pondered them in her heart.”  Luke 2:17-19

December 19 – “The shepherds returned, glorifying and praising God for all the things they had heard and seen, which were just as they had been told.  On the eighth day, when it was time to circumcise the child, he was named Jesus, the name the angel had given him before he was conceived.”  Luke 2:20-21

December 20 – “After Jesus was born in Bethlehem in Judea, during the time of King Herod, Magi from the east came to Jerusalem and asked, ‘Where is the one who has been born king of the Jews? We saw his star when it rose and have come to worship him.’  When King Herod heard this he was disturbed, and all Jerusalem with him.”  Matthew 2:1-3

December 21 – “When he had called together all the people’s chief priests and teachers of the law, he asked them where the Messiah was to be born.  ‘In Bethlehem in Judea,’ they replied, ‘for this is what the prophet has written: ‘’But you, Bethlehem, in the land of Judah, are by no means least among the rulers of Judah; for out of you will come a ruler who will shepherd my people Israel.’’”  Matthew 2:4-6

December 22 – “Then Herod called the Magi secretly and found out from them the exact time the star had appeared.  He sent them to Bethlehem and said, ‘Go and search carefully for the child. As soon as you find him, report to me, so that I too may go and worship him.’  After they had heard the king, they went on their way, and the star they had seen when it rose went ahead of them until it stopped over the place where the child was.”  Matthew 2:7-9

December 23 – “When they saw the star, they were overjoyed.  On coming to the house, they saw the child with his mother Mary, and they bowed down and worshiped him. Then they opened their treasures and presented him with gifts of gold, frankincense and myrrh.  And having been warned in a dream not to go back to Herod, they returned to their country by another route.”  Matthew 10-12

December 24 – “Jesus did many other things as well.  If every one of them were written down, I suppose that even the whole world would not have room for the books that would be written.”  John 21:25

December 25 -- Merry Christmas!  We plan to read the whole story of Jesus Christ's birth on Christmas Day (or maybe Christmas Eve).

Recipe: Peppermint Bark

Last weekend, I attended two Christmas parties, and we hosted a Christmas party this past weekend!  For two of the parties, I prepared Peppermint Bark and Christmas Chocolate Bark...such great Christmas sweets!  Both sweets are very delicious, and easy to prepare.

Christmas Chocolate Bark

Ingredients:
  • White chocolate bars*
  • Milk chocolate bars*
  • Oreo cookies, crumbled in smaller pieces*
  • 2-4 tablespoons creamy peanut butter
Directions:
  1. Place chocolates in separate medium saucepans (or microwavable bowls), and melt chocolates.
  2. Once the white chocolate is melted, add peanut butter and mix well.  Then add half the Oreo cookies, and continue mixing.
  3. Add the other half of Oreo cookies to the milk chocolate, and mix well.
  4. Line a baking sheet with parchment paper.
  5. Alternate spooning the chocolate cookie mixtures on the parchment paper.
  6. Melt a small quantity of white chocolate, and drizzle on top of the bark.
  7. Refrigerate for 1-2 hours, until firm.
  8. Break apart into decent sized pieces.
*Quantities for these ingredients depend on your preference.


Peppermint Bark

Ingredients:
  • White chocolate bars*
  • Peppermint candy canes, crushed in small pieces*
  • Peppermint flavoring (optional: add to white chocolate, once melted)
Directions:
  1. Place chocolates in a medium saucepan (or a microwavable bowl), and melt chocolates.
  2. Once the white chocolate is melted, add the crushed peppermint candy canes.  NOTE:  When I lived in the States, I would use red and green peppermints.
  3. Line a baking sheet with parchment paper.
  4. Pour the chocolate mixture on the parchment paper.
  5. Sprinkle a few pieces of the crushed candy canes on top.
  6. Refrigerate for 1-2 hours, until firm.
  7. Break apart into decent sized pieces.
*Quantities for these ingredients depend on your preference.

Book Review: It's Your Call

 
It’s Your Call: What Are You Doing Here, by Gary Barkalow “is not your typical how-to, tips-and-techniques book.”  According to the preface, on pages 15 and 16, “This book is not about what you can do, but about who you are.  This is not about what you are good at, but what the good is that God has created in you.  This is not about finding a job, but finding your life.  This book is not about finding a solution to the situation you are in, but about deciphering your life as it unfolds in and around that situation.”

By providing personal anecdotes mixed with scripture verses and various quotes, Barkalow shares interesting excerpts from his life, including his successes and mistakes throughout the years, as he searched to uncover his call in life.

According to the author’s bio, included on the back cover, Barkalow is the director and founder of The Noble Heart, “a ministry that helps men and women find their lives in God and their calling in this world.”  Throughout the book, it is evident that the author is passionate about helping others determine how to discover God’s calling for their lives and proceed to live that calling fully.

It’s Your Call seems to be written more for older adults, particularly those who are unsure about their place in life and who are willing to discover more.  However, it would be a great gift for recent high school or college graduates.  This book provides a feasible challenge for readers (of any age) to implement in their lives.

Christmas Decorations

I simply adore the Christmas season...listening to Christmas music, wrapping gifts, sending Christmas cards, decorating the house, baking delicious sweets, enjoying Christmas parties, and (most importantly) celebrating the birth of Jesus Christ!

Over the weekend, I attended two Christmas parties.  I'll post a few photos later on (still need to upload them), and I might include two recipes for peppermint bark and chocolate bark.  On the Sunday after Thanksgiving, we decorated our home for Christmas.  Enjoy the photos!

Bible: Ninety-Five Percent

My journey through the Bible in chronological order within one year is almost over.  To read more details, please view my blog's Bible Reading Plan page.

Philippians is considered Paul's letter of joy.  Even though it was written during his imprisonment in Rome, these four chapters are full of joy.  Despite my circumstances (during suffering, pain, etc.), I'm still able to rejoice, since Jesus Christ always reigns!   Let's strive to live a life of joy.

Since I read Philippians today, I wanted to share several scripture verses:
"Now I want you to know, brothers, that what has happened to me has really served to advance the gospel.  As a result, it has become clear throughout the whole palace guard and to everyone else that I am in chains for Christ.  Because of my chains, most of the brothers in the Lord have been encouraged to speak the word of God more courageously and fearlessly."  Philippians 1:12-14

"Do nothing out of selfish ambition of vain conceit, but in humility consider others better than yourselves.  Each of you should look not only to your own interests, but also to the interest of others.  your attitude should be the same as that of Christ Jesus."  Philippians 2:3-5

"Do everything without complaining or arguing, so that you may become blameless and pure, children of God without fault in a crooked and depraved generation, in which you shine like stars in the universe....  So you too should be glad and rejoice with me."  Philippians 2:14-15, 18

"I know what it is to be in need, and I know what it is to have plenty.  I have learned the secret of being content in any and every situation, whether well fed or hungry, whether living in plenty or in want.  I can do everything through him who gives me strength."  Philippians 4:11-13
I encourage to you to take a few minutes and read through Philippians, and consider reading through the Bible within a year (or two) in 2011.  Oh, and I've read ninety-five percent of the Bible this year, according to the Blue Letter Bible accountability feature.
